Sauternes - Château Simon 'Cuvée Exceptionnelle'

This cuvée comes from the best plots. The grapes are harvested manually after 4 to 5 successive very meticulous sorting. Only over-ripe seeds and bunches (Botrytis Cinereas) are selected. The botrytised bunches are gently pressed overnight. After cold settling, the best juices are fermented and then aged in new oak barrels for 18 months.

With a sumptuous golden colour, this wine develops an elegant nose of citrus with a touch of honey on toast. On the palate, sublime aromas of melons and exotic fruits energized by the liveliness of candied apricot. The finish is very long, complex, greedy with spicy and minty notes.
