Sauternes - Château Simon 'Classique' Half Bottles (37.5cl)

The grapes are harvested manually, and with at least four or five consecutive passes, the grapes are harvested berry by berry, when the latter have reached the right level of attack by botrytis cinerea. The "Sauternes" of Château Simon is left to mature in oak barrels for 18 months. Like all botrytised wines from Sauternes, it does not need much presentation: it just waits to be fully enjoyed.

With a sumptuous golden colour, this wine develops an elegant nose of citrus with a touch of honey on toast. On the palate, sublime aromas of melons and exotic fruits energized by the liveliness of candied apricot. The finish is very long, complex, greedy with spicy and minty notes.
