Bordeaux - Graves - Château Simon ‘l’Empreinte’

With a deep ruby red colour, this wine has a fine and complex nose of slightly peppery black cherry. The smooth palate is a subtle combination of black fruit and spicy notes. The structure is elegant with a beautiful volume supported by fine woody notes. The finish is long and delicate with silky tannins. The wine is well rounded and supple, showing all the characteristics of an aristocratic claret. The grapes are hand harvested from the best plots.

This cuvée is made from a selection of the best plots. After alcoholic fermentation in thermo-regulated vats between 22°C and 24°C, the wine will be de-vatted after 15 to 20 days before malolactic fermentation. The best batches will be isolated for this cuvée and aged in oak barrels for 12 months.
